Biography/History

The Fairview Cheese Factory, owned and operated by Ernest H. Fischer, was located near Cedar Grove, Town of Holland, Sheboygan County, Wisconsin. Fischer was licensed to operate a cheese factory in 1908, after taking a course in dairying at the University of Wisconsin College of Agriculture. In 1916 he was licensed as a cheesemaker. At the factory, Fischer made whey cream, butter, and cheddar and American cheese. After his death on June 10, 1948, Fairview was operated for the next year by his widow, Amy.

Scope and Content Note

The collection contains personal financial and business records of Fischer and the cheese factory. Included are the factory's production and sales records, such as daily and monthly churn reports, total amounts of milk received and of butter and cheese made and sold, and amounts made for each milk producer. Payroll ledgers list the following production and financial data: pounds of milk received; and for each farmer, test results, such as average weight of butter fat, his total credit, and the amount of cheese, butter, and cream he purchased; final prices and totals; and a monthly balance. The financial records are both personal and corporate in nature, including state and federal individual and farm income tax returns, miscellaneous records, and Fischer's daybook listing names and purchases from what appears to be a general store or similar operation. The file of miscellany contains certificates, farm animal pedigrees, and licenses.
