WAR TIME RECIPES
MEAT SUBSTITUTES
Green Split Pea Loaf
1 cup dry peas, soak over night.
Cook until tender; add:
3/4 cup dry bread crumbs,
1 teaspoon mixed onion,
1 teaspoon minced parsley,
1/4 teaspoon minced thyme (or sage)
1 teaspoon salt,
1/8 teaspoon pepper,
1/2 egg,
1 cup water,
Mix, pack in baking dish, put fat over top, sprinkle with crumbs, and bake 3/4
hour in pan of water.
Using meat substitutes and creative cookery, Port Washington women
during World War I probably used some of these recipes in aiding the
war effort.
