Boiled Salmon in a Spicy Sauce

600 grams salmon (boneless)
3.5 decilitres water
1.5 decilitres whey (or white wine)
4 whole peppercorns
1 teaspoon salt
1 leaf of laurel
Spicy Sauce:0.5 decilitre cooking oil
1 tablespoon wine vinegar
1 teaspoon Dijon mustard
1 tablespoon fresh dill
1 tablespoon fresh parsley
1 tablespoon chives
3 teaspoons lemon rind
1/2 teaspoon sugar
salt, pepper

Boiling the Salmon1. Put the water, whey, pepper corns, salt and laurel leaf in a pot and bring to the boil.
2. Slice the salmon into four pieces and place it into the plot. Bring it to the boil again and then turn off the heat under the pot and let the salmon sit in the hot brew for about 7 minutes.
Preparing the Spicy Sauce3. Chop the chives, parsley, and dill and grate the lemon rind. Blend together with all the ingredients for the sauce.
Serving the Meal4. Carefully remove the skin and remove all the bones from the salmon.
5. Pour the spicy sauce over the salmon immediately before it is served.
Voila!Serve with boiled potatoes and broccoli.
